Revival of Traditional Japanese Alcohol Doburoku

Once restricted, doburoku finds a new home in Tokyo
Doburoku, a traditional Japanese alcoholic beverage, is making a comeback in Tokyo's Nihombashi area, thanks to Heiwa Doburoku Kabutocho Brewery.
This unfiltered spirit, historically consumed by farmers and Shinto priests, lost popularity due to restrictive 19th-century regulations.
However, recent liberalization has renewed interest in doburoku, mirroring Japan's broader revival of artisanal brewing traditions.
Tokyo's Sake Hotaru, opening in 2015, became the first legal venue to serve doburoku, and since then, outlets offering this beverage have increased.
In June 2022, Heiwa Doburoku Kabutocho Brewery opened a bar near Nihombashi, with about half its patrons being international tourists.
Norimasa Yamamoto, the President of Heiwa Shuzo, notes the growing curiosity among visitors about doburoku's production and its distinction from sake.
While still unfamiliar to many Americans, interest in this unique spirit is gradually rising, particularly from sake enthusiasts and brewery visitors.
